If you are still using Outlook 2003 and aren't planning on upgrading to RTM within the next couple of days, you'll need to move items stored in Unicode format pst's to Outlook97/2002 compatible pst's before uninstalling Office.
To do this, create a new Outlook 97/2002 pst using the File, New menu and move or copy the items to it. For complete instructions, see http://www.slipstick.com/outlook/ol2003.htm#betaexp.
After Office expires, you'll be able to read and view
documents using the Office applications but you won't be able to
edit them or create new ones.
